You Weekly Dinner Menu!

Hi dear Reader,

How are you? I hope you’re having an amazing 4th of July long weekend if you're in the U.S. 🇺🇸

Since you're probably soaking up the holiday fun, I’ll keep this newsletter short and sweet and get straight to the point: I'm sharing some delicious, easy recipes for you to enjoy throughout the week.

I’ve organized them by day—complete with side dish suggestions when needed—to help make your time in the kitchen even easier. Hope you enjoy it!

If you try these recipes, don't forget to snap a pic and share them on my Instagram or in our Facebook Group.

P.S. You’ll also notice the newsletter has a fresh new format! I’m trying something a bit different to make it easier to follow and more helpful for planning your meals. Let me know what you think—I’d love your feedback!

Monday: Grilled Chicken Thighs

These juicy and tender chicken thighs goes really well with a delicious green salad and fluffy rice too.

Tuesday: Greek Chicken with Potatoes

This one-pan dish is a family favorite! I love making it because it doesn’t need any sides—it’s a delicious, fuss-free dinner everyone always enjoys.

Wednesday: Air Fryer Chicken Cutlet

This Chicken Cutlets are golden and crunchy on the outside, tender and juicy on the inside, and ready in less than 15 minutes. Serve with a delicious Greek salad.

Thursday: Italian Pasta Salad

This is the perfect light but filling salad that totally works as a main meal. It’s got carbs from the pasta, protein from the salami and cheese, and plenty of fiber from the veggies—making it an ideal quick summer dinner.

Friday: Zucchini Lasagna Rolls

These low-carb Zucchini Lasagna Rolls contain three types of cheese, tomato sauce, and nutritious zucchini noodles. And it's so good!

Things that I'm loving❤️

Got these cute white sandals for summer, and I’ve been wearing them everywhere! They’re super comfortable and go perfectly with all my summer dresses. Love them!

This is another dress I got for our summer vacation next week, and I love it too. It’s so light, comfortable, and looks perfect with white sneakers—ideal for summer!

Since our BBQ is out of commission while we work on the deck and backyard, I picked up this grill pan—and I’m loving it so far! It’s perfect for grilling steaks and pork chops indoors.

Hi dear Reader, I make this salad every time we have leftover salmon, which is a lot. But, salmon is a quick protein, so I can also cook up a couple of fillets while I prep the salad. I’ve tested a million salmon recipes, and my pan-seared salmon is definitely the quickest option. If I need something more hands-off, I’ll cook salmon in the oven. And when I want to experiment with flavors, I usually make air fryer salmon bites. Salmon Cobb salad is also very customizable. There are “classic”...
